Potato Salad Pie

3 pounds (about 10 medium) potatoes
2 cups diced celery
1/4 cup finely chopped onion
1/4 cup finely chopped parsley
1 cup Hellman’s Mayonnaise (Or Best Foods)
2 teaspoons cider vinegar
2 teaspooon salt
1/4 teaspoon pepperHellmann’s  (Or Best Foods) Real Mayonnaise, tomatoes, watercress, to garnish

Cook potatoes until render; peel and chill. Slive thinly or sice. Add celery, onion, parsley, 1 cup Hellmann’s, vinegar, seasoning. Toss lightly until well mixed. Press ito 9-inch pie plate. Build edges as for pastry.; smooth center. Chill at least 3 hours. Before serving, cover center genrously with Hellmann’s; decorate with tomoatoes and watercress. Makes 8 wedge shaped servings.
