Flaming Peach Pie
1 no. 2 1/2 can cling pache slices
Pastry for single-crust pie
1 tablespoon flour
3/4 cup brown sugar, packed
1/2 cup sifted all-purpose flour
1/4 cup soft butter or margaine
6 sugar cubes
Lemon extract
Drain peaches thoroughly. Line pie pan with pastry. Rub into it 1 tablespoon flour. Turn peaches into unbaked pie shell, save six slices. Blend sugar, flour and butter until crumbly. Sprinkle over peaches. Bake in hot oven 425 degrees F. 25-35 minutes,until pastry is browned and topping crisp. Arrnage 5 slices of peaches on top. Saturate sugar cubes with lemon extract, arrange o warm pie. Ignite cubes. Serve flaming. Makes 9-inch pie.
