Berry Special Cheesecake
1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons Parkay Margarine, melted
3 8-oz. packages Philadelphia Brand Cream Cheese
1/4 cup sugar
1 teaspoon vanilla
1 cup Kraft Strawberry Preserves or Jam
Combine crumbs, sugar and margarine; press onto bottom of a 9-inch springform pan. Bake at 325 degrees F. 10 minutes, Increase oven temperature to 450 degrees F.
Combine softened cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs one at a time mixing well after each addition. Blend in vanilla. Pour mixture over crust, bake at 450 degrees F. 10 minutes. Reduce oven temperature to 250 degrees F. continue baking 25-30 minutes or until done. Loosen cake from rim of pan; cool before removing rim. Chill before serving; top with strawberry preserves.
