Dear Sara: What do you do with leftover pancake mix? My family loves pancakes, so I make them a lot. I often have leftover mix in the box that is not enough to make another batch of pancakes. Any thoughts? –Carol

“Anadarko Daily News” Your question about what to do with leftover pancake mix.
My mother worked for a mom and pop restaurant. The “mom” did most of the cooking. When pancake mix was leftover, she added 3 or 4 Tablespoons of shortening, milk, baking powder if needed and egg and yellow cornmeal. This made a wonderful cornbread to serve with plate lunches. –Dorothy
Here’s a recipe for using up the last of the pancake mix and a recipe for coffee cake.
Pancake Mix Cornbread
8 inch square baking pan
Cooking spray
1-1/4 cup pancake mix
1 cup fine yellow cornmeal
1/3 cup sugar or honey
1/2 tsp salt
2 eggs
1 cup milk
2 tbsp butter, melted
Preheat oven to 375 degrees F. Mix all ingredients together and pour into a greased 8-inch square pan. Bake at 375° for 20-25 minutes.
Coffee Cake
2 cups pancake mix
2/3 cup milk
2 Tbsp. sugar
1 egg
Mix all together and pour into a greased 9″ round pan.
Streusel Topping
1/3 cup pancake mix
1/3 cup brown sugar
1/2 tsp. cinnamon
2 Tbsp. cold butter
Mix all until crumbly and sprinkle over batter. Bake at 375 for 18-22 min.
Great recipe! I had to cook an additional 6 minutes to cook all the way through.
You are a hero. Other pages said to cut back on baking soda/powder when replacing flour with pancake mix for cornbread, and that I might need to reduce other ingredients as well…but it was hard to find actual amounts to reduce by. Having a clear recipe is absolutely fantastic! Thank you so much!
