Choco Peanut Butter Dreams

1-1/2 cups brown sugar — firmly packed
1 cup peanut butter (creamy or chunky)
3/4 cup butter or margarine
1/3 cup water
1 egg
1 teaspoon vanilla
3 cups Quaker Oats (quick or old fashioned, uncooked)
1-1/2 cups flour
1/2 teaspoon baking soda
1-1/2 cups semisweet chocolate chips
4 teaspoons vegetable shortening
*1/3 cup chopped peanuts (optional)

Heat oven to 350 degrees F. Beat together brown sugar, peanut butter and butter, until light and fluffy. Blend in water, egg and vanilla; add combined dry ingredients; mix well. Shape dough into 1″ balls. Place on ungreased cookie sheet; flatten to 1/4″ thickness with bottom of glass dipped in sugar. Bake 8 to 10 minutes, or until edges are golden brown. Remove to wire rack, cool completely. In a heavy saucepan over low heat, melt chocolate pieces and vegetable shortening; stir until mixture is melted and smooth. Top each cookie with 1/2 teaspoon melted chocolate; sprinkle with chopped nuts. Chill until set. Store in an airtight container. Makes 6 dozen

Holiday Almond Crescents

1 cup (2 sticks) margarine or butter, softened
1/2 teaspoon almond extract
3/4 cup sifted Powdered Sugar
2 cups all-purpose flour
1/2 Teaspoon salt
1 cup Quaker oats (quick or old fashioned, uncooked)
1/2 cup finely chopped almonds
Powdered sugar

Heat oven to 325 degrees F. Beat margarine and almond extract until fluffy; gradually beat in sugar; Add combined flour and salt; mix well. Stir in oats and almonds. Shape to form crescents. Place on ungreased cookie sheet. Bake 15-18 minutes or until light golden brown. Sift powdered sugar over warm crescents. About 4 dozen.

Yuletide Toffee Squares

4 1/2 cups Quaker Old Fashioned Oats, uncooked
1 cup brown sugar, firmly packed
3/4 cup margarine or butter, melted
1/2 cup dark corn Syrup
1 tablespoon vanilla
1/2 teaspoon salt (optional)
1 12 oz. package semi-sweet chocolate morsels
2 tablespoons shortening
2/3 cup nuts, chopped (optional)

Heat oven to 450 degrees F. Grease 15×10-inch pan. Combine oats, sugar, margarine, corn syrup, vanilla and salt; mix well. Firmly press mixture into pan. Bake 12 minutes or until mixture is brown and bubbly. Cool completely. In saucepan over low heat, melt chocolate and shortening, stirring constantly until smooth. *Spread evenly over oat base; sprinkle with nuts. Chill until set; cut into bars. 60 bars
